Blue Ribbon Pecan Pie
My aunt Lydia entered this every year in the Gwinnett County Fair and made the other ladies green with envy! 1 cup light corn syrup 1/4 cup brown sugar 2 eggs, slightly beaten 2 tablespoon melted butter 2 tablespoon flour 1 tablespoon molasses 1 teaspoon vanilla 1/4 teaspoon salt 1 1/4 cups coarsely chopped pecans In a large bowl, combine corn syrup, brown sugar, salt, butter, and vanilla; mix well. Add slightly beaten eggs and blend well; stir in pecans. Pour into the unbaked pie shell. Bake in a preheated 350-degree oven for 45 minutes, or until set. Cool and serve with a dollop of whipped cream or vanilla ice cream. |
